Ingredients
- 1 - green pepper, chopped
- 1 - small onion, finely chopped
- - olive oil
- 1 - tin chopped tomatoes
- 2 - carrots, grated
- 1 - tin chickpeas, drained
- - couscous or rice to serve
- 400g - mince
- 3ml - each ground cumin, coriander and cayenne pepper
- bunch - of parsley, finely chopped
- 1 - clove garlic, finely chopped
Method
These golden-brown meatballs are a mid-week winner.
Preheat the oven to 200ºC.
Mix the mince, onion, parsley, garlic and spices, and season with salt. Roll into small walnut-sized balls and fry in batches until golden brown.
Spoon the meatballs into an ovenproof dish, add the tomatoes, chickpeas, green pepper and carrots, and season with salt and pepper. Bake for about 25 minutes. Serve with rice or couscous.
