Fritattas with ricotta, Parmesan and rocket

Ingredients
  • 12 - slices Parma ham (or use 24 slices Black Forest ham)
  • 300g - ricotta cheese
  • 100g - Parmesan or pecorino
  • - cheese, finely grated
  • 6 - eggs, beaten
  • - salt and freshly ground black
  • - pepper, to taste
  • 30g - rocket
Method
Preheat the oven to 180°C. Line the bottom of each muffin-tin cavity with the Parma or Black Forest ham.

Mix the ricotta, Parmesan and beaten eggs and season with salt and black pepper.

Place the rocket over the ham in the muffin-tin cavities and fill two thirds of each cavity with the cheese and egg mixture. Bake for 15 minutes (or until set) and serve hot or at room temperature.
