Frittata slices with olive oil and dukka

Ingredients
  • 1 - small onion, finely chopped
  • 30.00ml - butter
  • - a handful of freshly chopped herbs: use a variety, such as basil, Italian parsley, chives, coriander
  • 8 - eggs, beaten
  • - salt and freshly ground black pepper to taste
  • 60.00ml - milk
  • 45.00ml - grated Parmesan cheese
  • 30.00ml - fresh white breadcrumbs
Method
Eggs
Saute the onion in heated butter until soft and transparent. Mix the chopped herbs, beaten eggs and milk. Season to taste. Add the mixture to the onions in the frying pan. Stir over a low heat until the eggs start to set. Sprinkle the Parmesan cheese and breadcrumbs on top and place the pan under a preheated grill until the frittata is golden brown and set. Allow to cool. Turn out the frittata and cut it into slices. Serve with a bowl of olive oil and a bowl of dukka.
