Ingredients
- 4.00cloves - garlic cloves, crushed
- 2.50ml - paprika
- 5.00ml - ground cumin
- 15.00ml - fresh lemon juice
- 15.00ml - olive oil
- 5.00ml - salt and freshly ground black pepper, to taste
- 16.00 - sardines (depending on the size), cleaned, butterflied and heads removed
- 1.00 - lemon, cut into slices
- 1.00 - onion, cut into rings

Oven temperature: 240°C
1. Mix the garlic, spices, lemon juice, olive oil and seasoning. Rub this into the sardines.

2. Place the sardines, butterflied side up, in a roasting tin. Place the lemon slices and onion rings on top and oven roast for 8-10 minutes. The cooking time will be determined by the size of the sardines. Serve immediately.
Wine suggestion: Choose a light Chardonnay, Blanc Fumé or a wooded blend.
