Leek, Parmesan and bacon salad

Ingredients
  • 12 - baby leeks, rinsed
  • 12 - strips rindless bacon
  • 30ml - olive oil
  • - fresh salad leaves
  • 30ml - balsamic vinegar
  • - parmesan shavings
  • - salt and freshly ground black pepper
Method
The most delicious bacon salad ever.
Preheat the grill element. Place the leeks and bacon on a roasting tray and drizzle 15ml olive oil over. Grill until the leeks change colour and the bacon is crisp. Turn over to grill the other side as well. Set aside

Mix the salad leaves with the rest of the olive oil and balsamic vinegar and season with salt and pepper.

Place the salad leaves in a salad bowl and top with the roasted leeks and bacon. Sprinkle with Parmesan shavings and serve.
