Lemon and tuna spaghetti

  • 30ml - capers
  • 2 - tins tuna, drained, flaked
  • 500g - spaghetti
  • 50ml - olive oil
  • - handful fresh basil, rinsed
  • 50ml - butter
  • - juice and rind of 1 lemon
  • 100g - olives, pitted
  • 1 - large garlic clove, finely chopped
  • 1 - red chilli, seeded, chopped
Cook the pasta according to the package instructions until al dente. Heat the oil and butter together and fry the garlic and chilli until glossy, but don’t allow it to discolour. Add the lemon juice and grated rind.

Drain the pasta and mix it with the garlic, lemon oil, tuna, olives and capers while still warm. Sprinkle the basil over, season with salt and freshly ground pepper and serve immediately.
