Ingredients
- 400g - farfalle pasta or any other small pasta shape
- 2 - tins tuna, drained and flaked
- 200g - asparagus, blanched, halved and sliced diagonally
- 125ml - fresh mint, finely chopped
- 125ml - fresh parsley, finely chopped
- - salt and freshly ground black pepper, to taste
- 125ml - fresh breadcrumbs, toasted
- - DRESSING:
- - juice and zest of 1 lemon
- 30ml - olive oil
- 1 - garlic clove, crushed
Method
A memorable salad that will fast become a new family favourite.
Boil the pasta in salted water according to the directions on the package. Drain.
Beat the dressing ingredients together and stir through the pasta. Add the tuna, asparagus and herbs and stir through. Sprinkle the toasted breadcrumbs on top just before serving.
