- 1.00 - onion, chopped
- 5.00ml - salt and freshly-ground black pepper, to taste
- 1.00 - garlic clove, chopped
- 1.00 - twig fresh thyme
- 500.00g - frozen peas
- 80.00ml - chicken stock
- 2.00 - strips pancetta or rindless bacon

1. Heat the butter over a moderate heat in a frying pan and sauté the onion until soft and shiny. Season to taste with salt and freshly-ground black pepper. Add the garlic and thyme and stir-fry for another few minutes.
2. Add the peas, stock and pancetta or bacon and cook until the peas are soft and the liquid has reduced. Remove the thyme and pancetta or bacon and mash the peas with a potato masher. Serve.
