Oriental chicken balls

  • 500.00g - chicken breast fillets (or 500g chicken mince)
  • 0.000 - 3 garlic cloves, crushed
  • 0.000 - 1 red chilli, pitted and chopped
  • 0.000 - 1 small onion, finely chopped
  • 0.000 - 1 stem lemon grass, finely chopped
  • 0.000 - 1 handful of fresh coriander leaves, chopped
  • 40.00ml - fish sauce
  • 30.00ml - dry breadcrumbs
  • 0.000 - oil for frying
  • 0.000 - mint leaves for garnishing
  • 0.000 - sweet-chilli sauce (for serving)
Place the chicken, garlic, chilli, onion, lemon grass, coriander leaves and fish sauce in a food processor and pulse until all the ingredients are mixed. Shape the mixture into bite-sized balls, cover them in breadcrumbs and fry in hot oil until golden brown. Drain the balls on kitchen paper. Wrap a fresh mint leaf around each ball and insert a cocktail stick or small metal skewer. Place each ball in a salad leaf (in a glass, if preferred).
