Ingredients
- 500.00g - chicken breast fillets (or 500g chicken mince)
- 0.000 - 3 garlic cloves, crushed
- 0.000 - 1 red chilli, pitted and chopped
- 0.000 - 1 small onion, finely chopped
- 0.000 - 1 stem lemon grass, finely chopped
- 0.000 - 1 handful of fresh coriander leaves, chopped
- 40.00ml - fish sauce
- 30.00ml - dry breadcrumbs
- 0.000 - oil for frying
- 0.000 - mint leaves for garnishing
- 0.000 - sweet-chilli sauce (for serving)
Method

Place the chicken, garlic,
chilli, onion, lemon grass,
coriander leaves and fish
sauce in a food processor and
pulse until all the ingredients
are mixed.
Shape the mixture into
bite-sized balls, cover them in
breadcrumbs and fry in hot oil
until golden brown. Drain the
balls on kitchen paper.
Wrap a fresh mint leaf
around each ball and insert a
cocktail stick or small metal
skewer. Place each ball in a
salad leaf (in a glass,
if preferred).
