Ingredients
- 600-800g - ostrich meat, cubed
- 12 - small, soft-dried apricots
- 1 - small onion, cut into wedges
- 1 - thumb-sized piece of ginger, grated
- 40ml - soy sauce
- 100ml - apricot jam
- 30ml - lemon juice
- - couscous, to serve
- - tzatziki
Method
Thread the ostrich, apricots and onion wedges onto kebab sticks. Mix the ginger, soy sauce, jam and lemon juice, and then baste the kebabs.
Heat a griddle pan until very hot and grill the kebabs in batches until golden-brown and medium rare. Serve with couscous and tzatziki.
