Ingredients
- 1 - large bag fresh rocket
- 300g - large strawberries
- - fresh mozzarella
- - DRESSING:
- 90ml - olive oil
- 30ml - brown vinegar
- 10ml - hot English mustard, or to taste
- - honey to taste
- - fresh or dried basil
Method
It’s light and bright and easy to make. What a score!
Mix all the ingredients for the salad dressing. Arrange the rocket in a salad bowl and drizzle the dressing over the leaves.
Slice the strawberries in quarters or rounds (depending on the size) and arrange on top of the rocket. Tear up the mozzarella balls and place on the strawberries to perfectly round off this delicious summery salad. Dress and serve.
