Calamari burgers

Ingredients
  • 1 - small onion, sliced into rings
  • 4 - hamburger rolls
  • 1/2 - cucumber, very thinly sliced
  • 2 - handfuls butter-lettuce leaves
  • - 600 to 800g frozen calamari rings, defrosted and cleaned
  • - oil for deep frying
  • - 5 to 10ml chilli powder or cayenne pepper
  • 15ml - sea salt
  • - garlic mayonnaise and lemon wedges to serve
  • 60ml - cake flour
  • 60ml - cornflour
Method
Dry the calamari well with paper towels and mix into the cornflour, flour, chilli powder and sea salt until completely coated.


Heat the oil and fry the calamari in batches until crisp and cooked through – it’s a matter of seconds. Drain on paper towels. Serve the calamari on rolls with butter lettuce, cucumber, onion rings and garlic mayonnaise. A dash of lemon juice will add even more zest.

TIP Defrost the calamari in a little milk to tenderise it. You can also serve the fried calamari with savoury rice instead of the rolls.
