Ingredients
  • 1 - small onion, sliced into rings
  • 1/2 - cucumber, very thinly sliced
  • - garlic mayonnaise and lemon wedges to serve
  • - 600 to 800g frozen calamari rings, defrosted and cleaned
  • - oil for deep frying
  • 2 - handfuls butter-lettuce leaves
  • - 5 to 10ml chilli powder or cayenne pepper
  • 60ml - cornflour
  • 4 - hamburger rolls
  • 60ml - cake flour
  • 15ml - sea salt
Method
1 Dry the calamari well with paper towels and mix into the cornflour, flour, chilli powder and sea salt until completely coated.


2 Heat the oil and fry the calamari in batches until crisp and cooked through – it’s a matter of seconds. Drain on paper towels. Serve the calamari on rolls with butter lettuce, cucumber, onion rings and garlic mayonnaise. A dash of lemon juice will add even more zest.

TIP Defrost the calamari in a little milk to tenderise it. You can also serve the fried calamari with savoury rice instead of the rolls.
