Ingredients
- 125ml - self-raising flour
- 125ml - cornflour
- 125ml - soda water
- 1 - red and green pepper, diced
- 10ml - oil
- 1 - egg
- 2 - rings of tinned pineapple (retain the juice)
- 2 - carrots, chopped
- 15ml - each soya sauce, pineapple juice (from the tin) and tomato sauce
- 5ml - vinegar
- - oil to deep-fry
- 600g - pork cubes
- - basmati rice to serve
Method
This easy recipe is the perfect appetiser for entertaining.
Whisk together the flour, soda water and egg. Heat the oil in a pan until hot and stir-fry the peppers, pineapple and carrots quickly until just cooked and crispy. Add the soya sauce, pineapple juice, tomato sauce and vinegar, and simmer over low heat until thick and smooth.
Heat the oil until warm. Dip the pork cubes into the batter and deep-fry a few at a time. Serve with the sweet and sour veggies and rice.
