8 - slices of seed loaf or health bread

- 3-4 small aubergines, sliced and roasted

1 - wedge brie cheese, sliced

- generous handful fresh basil
Method
For anyone who loves healthy food – also suitable for vegetarians!
Spread hummus on the bread.
Arrange the aubergines and brie on half of the buttered slices and top with a layer of basil. Then close the sandwich with the remaining slices. Cut in half and serve.
