- 3 - leeks, chopped
- 3 - spring onions, chopped

- 2 - eggs, beaten
- 100ml - peanuts

Method
This versatile dish is great for any time of the day.
Fry the brinjal in oil until soft. Add the rest of the veggies and stir-fry until cooked.
Stir in the rice and heat until warmed through. Move the stir-fry to the side of the pan and add the eggs. Mix the eggs through the stir-fry as soon as they start to cook. Remove the pan from the heat, sprinkle with the peanuts and soya sauce and serve immediately.
