Veggies and rice stir-fry with egg

  • 1 - brinjal, cut into rings
  • 30ml - olive oil
  • 250ml - peas
  • 3 - leeks, chopped
  • 3 - spring onions, chopped
  • - handful of baby spinach
  • 250ml - rice, cooked
  • 2 - eggs, beaten
  • 100ml - peanuts
  • - soya sauce
This versatile dish is great for any time of the day.
Fry the brinjal in oil until soft. Add the rest of the veggies and stir-fry until cooked.

Stir in the rice and heat until warmed through. Move the stir-fry to the side of the pan and add the eggs. Mix the eggs through the stir-fry as soon as they start to cook. Remove the pan from the heat, sprinkle with the peanuts and soya sauce and serve immediately.
