Ingredients
- - about 4 watermelon wedges, cut into squares and pitted
- 4 - celery sticks, thinly sliced
- 2 - rounds feta cheese, crumbled
- - 10-12 black olives, pitted and halved
- 100g - pumpkin seeds
- 50ml - mint leaves
- - DRESSING:
- 100ml - olive oil
- - juice of 1 lemon
- - salt and freshly ground black pepper
Method
This colourful salad is a great starter or side dish
Prepare the salad dressing
Mix all the ingredients together by shaking them in a sealed jar. Taste to season, if necessary.
Place the watermelon, celery, feta and olives in a salad bowl or arrange on a serving dish. Drizzle some salad dressing over and top with sprinklings of pumpkin seeds and mint. Serve.
