Watermelon, celery, feta and pumpkin seed salad

Ingredients
  • - about 4 watermelon wedges, cut into squares and pitted
  • 4 - celery sticks, thinly sliced
  • 2 - rounds feta cheese, crumbled
  • - 10-12 black olives, pitted and halved
  • 100g - pumpkin seeds
  • 50ml - mint leaves
  • - DRESSING:
  • 100ml - olive oil
  • - juice of 1 lemon
  • - salt and freshly ground black pepper
Method
This colourful salad is a great starter or side dish
Prepare the salad dressing

Mix all the ingredients together by shaking them in a sealed jar. Taste to season, if necessary.

Place the watermelon, celery, feta and olives in a salad bowl or arrange on a serving dish. Drizzle some salad dressing over and top with sprinklings of pumpkin seeds and mint. Serve.
