Bacon and broccoli noodle salad

Ingredients
  • 200g - bacon bits
  • 45ml - olive oil
  • 125ml - mixed seeds, nuts and cranberries
  • - about 250g noodles, cooked
  • 30ml - balsamic vinegar
  • 300g - broccoli florets
  • 4 - plump baby marrows, cut into thin strips
  • - a handful of rocket
  • 2 - rounds feta, crumbled
Method
Enjoy lukewarm or cold.

1 Fry the bacon in 30ml oil until crispy, stir in the seed mixture and fry until lightly toasted. Stir the noodles through the hot oil and add the vinegar just before removing from the heat.

2 Combine the broccoli and baby marrows with the remaining oil and season with salt and pepper. Roast under a preheated grill until the tips start to char. Remove from the oven and mix into the lukewarm noodles with the rocket and feta.
