• 1 spiral of boerewors (about 500 g)
• 6 spring onions, chopped
• 2 pimento peppers, seeded and chopped
• 1 chilli, seeded and finely chopped
• 6 eggs, beaten
• 250 ml cream or full fat yoghurt
• 1 feta cheese round, crumbled
• fresh bread and avocado to serve
1 Sauté the wors slowly in a small heavy-based oven-proof pan without adding any extra oil until golden brown on all sides. Discard most of the fat. Add the spring onions, peppers and chilli and sauté for a minute or two.
2 Beat the cream into the eggs and pour over the wors in the pan. Sprinkle the feta on top. Cook over low heat for about 5 minutes. Then place the pan under a preheated grill to brown the top and to complete the cooking process. Serve with bread and avocado.
