Chicken casserole with tomatoes

Savour the flavour and convenience of tinned or bottled tomatoes.

Makes 4 generous servings

Preparation time: 15 minutes 

Cooking time: 35 minutes

• 8 chicken pieces (thighs and drumsticks)

• 5 ml chicken spice

• 30 ml olive oil

• 1 onion, chopped

• 250 g mushrooms, sliced

• 125 ml white wine

• 8 bottled Peppadews, sliced

• 1 tin tomatoes with garlic and herbs

• 100 g olives, pitted

1 Season the chicken well with the spices, salt and pepper to taste. Heat the oil in a pan and fry the chicken until golden-brown. Add the onion and mushrooms and fry for a few more minutes until browned.

2 Stir in the wine and cook for a few minutes. Stir in the Peppadews, tomatoes and olives and simmer for 25 minutes or until cooked and fragrant. Serve with mashed potatoes, bread, rice or pasta.

Tip Feel free to add fresh oregano or thyme to the sauce while it’s simmering.
