• 9 frankfurters
• a delicious tomato salsa, to serve
PASTRY
• 200g flour
• 125ml butter
• 62.5ml medium-fat cream cheese
• 125ml Cheddar cheese, finely grated
• a generous pinch of cayenne pepper
1. Make the pastry Rub the butter into the flour until it resembles breadcrumbs. Add the remaining ingredients and knead together until smooth. Shape into a flat disk, wrap in cling film and leave to rest in the refrigerator for 20 minutes.
2. Roll out the pastry into a rectangular shape on a surface sprinkled with flour. Cut the rectangle into about 6 equal strips. Weave the pastry strips over and under the sausages as we’ve done (it helps to work on a sheet of baking paper). Press the ends together. Place the ‘pie’ on a baking tray and bake in a preheated oven at 180°C for about 25 minutes or until the pastry is golden brown and crispy. Delicious!
