Pasta with fresh watercress and basil sauce

  • handful - fresh basil
  • 60ml - roasted almonds
  • 150ml - olive oil
  • 400g - short pasta
  • 200g - cherry tomatoes, halved
  • 2cloves - garlic
  • 2 - smoked chicken breasts thinly sliced
  • - juice of 1 lemon
  • 3 - celery sticks, finely chopped
  • handful - watercress
  • 100ml - parmesan cheese, grated
Cook the pasta as per instructions on the packet.

Meanwhile, purée the watercress, basil, garlic, almonds, Parmesan and oil in a blender, to make a thick sauce. Season well with salt and pepper and mix it through the cooked pasta.

Mix the celery, cherry tomatoes and smoked chicken slices and add to the mixture; serve warm
