Ingredients
- handful - fresh basil
- 60ml - roasted almonds
- 150ml - olive oil
- 400g - short pasta
- 200g - cherry tomatoes, halved
- 2cloves - garlic
- 2 - smoked chicken breasts thinly sliced
- - juice of 1 lemon
- 3 - celery sticks, finely chopped
- handful - watercress
- 100ml - parmesan cheese, grated
Method
Cook the pasta as per instructions on the packet.
Meanwhile, purée the watercress, basil, garlic, almonds, Parmesan and oil in a blender, to make a thick sauce. Season well with salt and pepper and mix it through the cooked pasta.
Mix the celery, cherry tomatoes and smoked chicken slices and add to the mixture; serve warm
