Hot pesto potato salad with pork bangers

Serves

Preparation time: 20 minutes

Braai time: about 30 minutes

  • 6–8 pork bangers
  • 30ml olive oil
  • 15ml tomato paste
  • pinch of sugar
  • 125ml stock
  • 500g baby potatoes, halved and cooked
  • 45ml basil pesto
  • 125ml peas
  • about 30ml fresh mint
  • about 30ml fresh basil
  • 4 boiled eggs, peeled and halved

1. Fry the sausages in oil until golden brown all over. Add the tomato paste and sugar, and cook for another minute or two. Stir in the stock and simmer until most of the liquid has reduced and the sausages are cooked.

2. Drain the hot potatoes and mix immediately with the pesto and peas. Put a lid on it and allow the flavours to infuse.

3. To serve Combine the potato salad with the herbs, top with the boiled eggs and serve with the sausages.
