Ingredients
- 500g - mince
- 1 - chilli, seeded and finely chopped
- 5ml - each coriander, cumin and paprika
- 1 - egg
- 250ml - breadcrumbs
- - oil
- 1 - large ciabatta
- 30ml - butter
- 1 - onion, sautéed until fragrant
- 150ml - cheese sauce
- 150ml - grated mozzarella cheese
Method
Quick and easy – perfect for a Saturday afternoon.
1 Mix together the mince, chilli, spices, egg and breadcrumbs. Season with salt and pepper. Shape into bite-size meatballs and pan-fry in oil until cooked.
2 Preheat the oven to 200°C. Cut off the top of the ciabatta and hollow it out slightly. Spread with butter and bake until crispy.
3 Arrange the onions, meatballs and cheese sauce in layers in the ciabatta and sprinkle with the mozzarella. Bake in the oven until golden brown; about 15 minutes (keep a close eye on it). Sprinkle with the rocket and cut into slices.
