
- 3 - very ripe medium-sized bananas
- 125ml - oil
- 60ml - milk
- 100ml - brown sugar
- - pinch of salt
- 2 - extra-large eggs, whisked
- 240g - brown bread wheat flour
- 10ml - baking powder
- 100ml - coconut shavings
- 1 - just-ripe banana
- - Nutella
1. Peel and slice the ripe bananas. Put them in a mixing bowl together with the oil, milk, sugar, salt and eggs and mix with a stick blender until smooth. Sift the flour and baking powder into the bowl (plus any bran left behind in the sieve), then add the coconut and fold until just combined. Grease 4 mini loaf pans and pour the batter into them.
2. Slice the just-ripe banana and arrange it on top of the loaves. Bake in a preheated oven at 160°C for about 25–30 minutes or until just cooked. Turn out and cool completely.
3. To serve, cut each loaf into three, horizontally, and spread a thick layer of Nutella between each layer. Stack on top of each other once again.
