Pesto pasta

A hearty family meal for a week night.

Preparation time: 10 minutes

Cooking time: 15 minutes

• 300g spaghetti

• 200g bacon, chopped

• 15ml olive oil

• 1 small brinjal, cut into blocks

• 200g cherry tomatoes, halved

• 100g olives, pitted and chopped

• 1–2 feta rounds, crumbled

• 60ml basil pesto

1 Bring a pot of salted water to the boil and cook the pasta until al dente. While this is cooking, fry the bacon in the oil until it begins to colour. Now add the brinjal and fry until it is cooked. Stir in the tomatoes and fry until they burst and a sauce begins to form. Finally, stir in the olives and feta and switch off the stove plate.

2 Drain the pasta as soon as it’s ready and stir it into the fried vegetables and bacon. Add the pesto, salt and pepper to taste. Mix well and serve immediately.
