- 8 - pork bangers
- 30ml - oil
- 1 - onion, chopped
- 1 - red pepper, chopped
- 1 - clove garlic, chopped
- 1 - tin butter beans, drained and rinsed
- 8 - roma tomatoes, halved
- 30ml - balsamic vinegar
- 4 - bread rolls, lightly toasted,
- - or 8 slices of toast
Brown the bangers in the oil, spoon out and set aside. Fry the onion, garlic and red pepper in the same oil until glossy, then add the beans, tomatoes and balsamic vinegar and fry for 5 minutes so that the flavours blend.
Spoon the sausages back into the pan and heat the mixture to cook through.
To serve: Divide the sauce between the bread rolls or toast and spoon the bangers on top. Serve with a salad.
