1 Cook the noodles, according to the instructions on the packet, until al dente. Drain and set aside.
2 Heat the oil in a heavy-bottomed pan and stir-fry the vegetables until browned. Add the minced pork, garlic and ginger, and stir-fry until the meat has broken up into smaller granules and is cooked through.
3 Stir in the oyster sauce and spring onions and mix through. Add the noodles and chilli oil and stir-fry for a minute or two. Season with soya sauce to taste and sprinkle with fresh herbs.
