FILLING
• 15ml olive oil
• 500g lean mince
• 1 clove garlic, chopped
• 1 carrot, grated
• 15ml meat spice
• 1 tin ratatouille
TOPPING
• 1 egg
• 125ml oil
• 125ml milk
• 250ml self-raising flour
• 250ml corn kernels
• pinch of paprika
• 125ml grated mozzarella
1. Preheat the oven. Heat the oil in a pan and fry the mince, garlic and carrot together until cooked and fragrant, making sure to break up the meat continuously with a spatula. Add the spices and ratatouille. Heat through and season to taste with salt and pepper. If your pan is not ovenproof, spoon into a casserole dish.
2. Beat all the topping ingredients together, except for the cheese; season with a pinch of salt and pour over the meat. Sprinkle the cheese on top and bake for about 35 minutes until golden-brown and cooked through.
