Sticky pork skewers

Soak the skewers in water beforehand so they don’t burn during the cooking process.

Makes 8 skewers

Preparation time: 30 minutes

Cooking time: about 15 minutes

  • 500ml boiling water
  • 250ml coconut milk
  • 250ml jasmine rice
  • 800g leg of pork, cut into 2cm cubes
  • ½ red onion, cut into petals
  • 1 large red pepper, seeded and cut into squares
  • 16 bay leaves
  • 15ml olive oil
  • 60ml plum sauce
  • lime wedges to serve

1. Bring the water and coconut milk to the boil and season with salt. Stir in the rice, cover and simmer over medium heat until the rice is cooked and all the liquid has been absorbed. Remove from the heat and let it stand for about 5 minutes.

2. Thread the meat, onion, pepper and bay leaves onto skewers. Sear the skewers on all sides in the olive oil. Baste with the plum sauce and add a dash of water to the pan. Cover and cook for a couple of minutes before removing the lid and reducing the sauce until sticky. Serve with coconut rice and lime wedges.
