1 Using a sharp knife or kitchen scissors, trim off the tips of the wings (keep for stock); then cut each wing at the joint. Season the chicken with salt and pepper, rub in and leave to stand for 5 minutes.

2 Dip the seasoned wings in the cornflour, making sure each piece is well coated. Shake off any excess cornflour.
