Oven temperature: 180°C

  • 1 onion, chopped
  • 15ml oil
  • 250g mince
  • 15ml mild curry powder
  • 1 tin lentils, rinsed and drained
  • 1 tin chopped tomatoes
  • 100g mixed nuts, chopped
  • 4 eggs, beaten
  • 125ml milk
  • 6 lemon or bay leaves

1. Fry the onion in the oil until glossy. Add the mince and fry while breaking up the meat continuously with a spatula. Add the curry and fry for a further two minutes. Add the lentils and tomatoes and simmer for 10 minutes. Season with salt and pepper.

2. Preheat the oven. Add the nuts to the mince and spoon into an ovenproof dish. Beat the egg and milk together and pour over the top. Add the lemon or bay leaves to the egg mixture, sprinkle with salt and pepper and bake for 20 minutes or until the egg layer is golden brown.
