1 Make the batter Whisk all the ingredients together until smooth and leave to rest for 20 minutes while you prepare the veggies.
2 Heat a little oil in a pan and fry the bacon until crispy. Remove the bacon and fry the vegetables until fragrant. Add salt and pepper to taste. Remove and set aside.
3 Heat a 25cm thin-based pancake pan and smear the bottom with a little oil. Spoon half the vegetables and bacon into the pan, as well as half the prawns. Spoon about half of the batter on top and spread it out evenly. Cover and cook for a few minutes on moderate heat.
