Lemony tuna pasta salad

  • 125ml - fresh breadcrumbs, toasted
  • 200g - asparagus, blanched, halved and sliced diagonally
  • 2 - tins tuna, drained and flaked
  • 1 - garlic clove, crushed
  • 125ml - fresh mint, finely chopped
  • 125ml - fresh parsley, finely chopped
  • 400g - farfalle pasta or any other small pasta shape
  • - salt and freshly ground black pepper, to taste
  • 30ml - olive oil
  • - juice and zest of 1 lemon
Boil the pasta in salted water according to the directions on the package. Drain.

Beat the dressing ingredients together and stir through the pasta. Add the tuna, asparagus and herbs and stir through. Sprinkle the toasted breadcrumbs on top just before serving.
