Oven-baked fish in cheese sauce

Cooking time: 25 minutes 

Oven temperature: 220°C

• 4 leeks, chopped (use only the white parts)

• 50ml butter

• 50ml flour

• 500ml warm milk

• 1 bay leaf

• nutmeg

• 250ml mature Cheddar cheese, grated

• 6-8 portions of hake (about 800g)

• homemade breadcrumbs

1 Preheat the oven. Fry the leeks in butter until glossy. Beat in the flour and cook for a few seconds. Beat in the milk until smooth and bring to the boil. Season with the bay leaf, salt, pepper and nutmeg. Remove from the heat and stir in the cheese.

Arrange the fish in a single layer in an ovenproof dish, pour the sauce over and sprinkle with breadcrumbs. Bake until golden brown and cooked (about 20 minutes).
