What’s more iconic than a fruitcake for the festive season? But why not try something new this year – a light Christmas cake made with products from the SPAR Freshline range. It’s new, something different and perfect for an African Christmas.
White Chocolate Christmas Cake Mousse
Serve this dessert with a fresh fruit salad to cut through the mousse’s rich taste.
10 ml gelatine
45 ml water
200 g white chocolate, finely chopped
100 ml SPAR full-cream milk
350 ml SPAR fresh cream
200 g SPAR Freshline Luxury Fruitcake, finely crumbed
SPAR Freshline strawberries
SPAR Freshline raspberries
SPAR Freshline blueberries
2 sprigs SPAR Freshline mint, finely chopped
Zest and juice of 2 SPAR Freshline lemons
60 ml SPAR castor sugar
Liberally spray a 2-litre bundt cake pan with non-stick cooking spray. Sprinkle the gelatine over the water and let it rest for 1 minute until spongy. In a glass bowl placed on top of a saucepan of boiling water, stir the milk and chocolate until melted. Add the gelatine and stir over the boiling water until smooth. Fold in the cream and fruitcake crumbs and pour the mixture into the cake pan. Set in the fridge for 3-4 hours. Mix all the fruit salad ingredients. Dunk the cake pan in boiling water for 30 seconds. Invert on a serving plate. Arrange the fruit salad around the mousse cake and dust with icing sugar. Serve.

Fruit mince pie wreath
What makes this dessert great is the fruit salad served with the pies.
1 vanilla pod, cut and deseeded
200 g (250 ml) SPAR white sugar
250 ml water
juice and zest of 1 SPAR Freshline lemon
400 g SPAR Freshline strawberries, halved
200 g SPAR Freshline blueberries
200 g SPAR Freshline fresh cherries, stoned
20 SPAR Freshline festive fruit mince pies
1 litre SPAR vanilla ice cream
Place vanilla seeds and pod, sugar, water, lemon juice and zest in medium saucepan. Mix well and bring to the boil. Allow to simmer for 5 minutes. Place fruit in mixing bowl. Remove vanilla pod from hot syrup and pour syrup over fruit. Allow to marinate for 10 minutes. While the fruit salad is marinating, heat SPAR Freshline festive fruit mince pies according to package instructions. Remove pies from tinfoil cases and arrange on a large platter in the shape of a Christmas wreath. Spoon fruit salad over wreath and top with dollops of ice cream. Serve.
