Brown rice salad with apricots

Serves: 6 | Preparation time: 10 minutes | Cooking time: 25 minutes

1. Cook the rice according to the instructions on the packet or follow this method: Soak the rice in cold water for 30 minutes. Drain and transfer the soaked rice to a big pot. Add 6 cups boiling water and 1 teaspoon salt. When the water comes to a boil, lower the heat, close the lid and simmer the rice for 20 minutes. Drain and steam over a low heat for 5–10 minutes. Drain the last of the water and let the rice cool down a little.
