I also cook double of everything I make (pasta and sauces which can be eaten cold). Roasted chicken pieces, tuna sandwiches are a staple. Cold mielies are also a hit and of course viennas and things they can snack on. You can keep it healthy though and skip expensive store bough items.
I also bake muffins (savoury and sweet) so there is also always something for dessert. I have a small baby so I have to prepared in any case as boiled cooled water is a priority in our house.
I sincerely recommend that we go back to basics and make our staples in the house rather than rely on convenience shopping. As Eskom messes things up, fast food joints with generators are making a killing. Imagine how many people pick up burgers and pizzas each time the lights go out? Preparation is key.
As of last month I started a weekly meal plan and I try to get most of my cooking done at odd hours when the grid is not under pressure. I bake at 4am so I am done by 6am if there is going to be a morning outage. I prepare lunch AND supper at 12pm and often make a soup to go with that. Soup being such a healthy snack. I also make fresh bread rolls so we don't have to rely on the store bought bread. We were getting through a lot of it (R333/month if we buy a loaf each day or if we bouy 2 loaves R666).
I urge people to find ways to cut costs for themselves.
