Breakfast is the most important meal of the day. It's a clichè for a reason. When kids eat a good breakfast, they're set for the morning. It gives you a good boost of energy and can make a big difference to your energy levels for the day.

But sometimes good breakfasts take time to make. I found that preparing things the night before saved a ton of time in the mornings, when time is most often against you. And when you are a parent, time seems to be especially fleeting.

Here are 3 great breakfasts you can make the night before in preparation for a great start to the morning.

Fritatta muffins

The great thing about these is that you can freeze these for a month. They're really quick to make and the oven does most of the work. They're quite versatile so you can chop and change the vegetables for what ever you prefer.

Ingredients

6 eggs
1/3 cup full cream milk
Your choice of sliced up cold meat (optional)
6 Mushrooms
1/2 Onion
1/4 Green pepper
1/4 cup frozen corn
1/2 cup of grated cheese

Method

1. Grease a muffin tin and preheat your oven to 180º

2. In a large mixing jug beat the eggs and milk.

3. Add all the other chopped up ingredients.

4. Divide equally among the muffin tin, filling it up 3/4 of the way.

5. Bake for 20 minutes (it may need a bit longer of you're using a big muffin tin)

Fruit salad and yoghurt

This is a pretty simple recipe, but it's healthy and if served with plain yoghurt is really healthy. You can sprinkle with muesli to make it extra filling. With summer coming up there are all kinds of delicious fruit to make this breakfast really fresh.

Ingredients

Apples
Bananas
Orange or naartjies
Strawberries, blueberries, raspberries
Kiwi
Peaches

Method

1. Cut the fruit up into bite size pieces.

2. Make sure to evenly coat all the fruit with the orange juice to prevent browning.

Creamy vanilla spiced oats

Oats can get boring and kids will easily turn their nose up oats. But this is basically dessert for breakfast. This can be made the night before and stored in the fridge, and just warmed up in the morning.

Ingredients

1/2 cup of oats
1/4 vanilla pod
1/4 quill of cinnamon
1/2 teaspoon ground cardamon
Sugar to taste

Method

1. Soak the oats in 3/4 cup of boiling water for an hour or two.

2. Add all the spices.

3. Transfer to a small pot and add half a cup of milk.

4. Cook for 15 minutes, stirring occasionally.

5. Add sugar to taste.
