The former Junior Springbok had been on the Bulls' books since 2018, having joined from Irish club Ulster where he played for five years.
The 32-year-old previously represented the Sharks (2009-2014).
Bulls director of rugby Jake White thanked Herbst for his services and wished the burly front-ranker well on his future endeavours: "Wiehahn is an experienced prop who has learnt his trade internationally. We know he will add value at the Lions, and wherever he travels beyond that. We wish him all the best with his path ahead, and hope he grows from strength to strength."
Herbst added via a press statement: "My time at Loftus may have been short but it was packed with memories. Thank you for welcoming me into the Bulls fmaily and allowing me the opportunity to play in the blue jersey."
Herbst is the latest in a long list of signings announced by the Lions this week.
Earlier in the week, hooker Jaco Visagie, centre Burger Odendaal also crossed the Jukskei river to Ellis Park, while the Johannesburg franchise also signed centre EW Viljoen from Leicester in England.
