If this sounds complicated, then don’t worry, Mediterranean Delicacies has got your back with these 4 yummy Father’s Day inspired pizzas:

Pizza Dough Recipe  (use as base for all recipes below)

Based on recipe created for Mediterranean Delicacies from The Food Fox

Ingredients for dough:

  • 2 cups (500 ml) flour
  • 2 t (10 ml) instant yeast
  • 1 t (5 ml) sugar
  • 1/2 t (2,5 ml) salt
  • 3/4 cup (185 ml) lukewarm water
  • 1 T (15 ml) olive oil

Method:

  • In a large bowl, mix flour, yeast, sugar and salt together.
  • Add water and olive oil and mix until a sticky dough forms.
  • Knead until the dough becomes soft and pliable.
  • Cover and let it rise in a warm area for about 15-30 minutes until doubled in size.
  • Pre-heat oven to 220 degrees Celsius for at least 20 minutes.
  • On a well-floured surface, roll out into a round shape
  • Transfer to a large baking tray lined with baking paper.
  • Bake at 220 C for 12-15 minutes, or until golden brown and thoroughly cooked

Pizza Shape

  • Using the corresponding shaped cookie cutters or a pastry cutting wheel, cut out the following shapes: 7 hexagonal shapes, 6 triangles, 5 – 6 think rectangles
  • Smear on Mediterranean Delicacies Sundried Tomato Pesto
  • Add cheese and your choice of toppings such as olives, anchovies, prawns or salami

Directions for Display

  • Place one hexagonally shaped pizza piece in the centre of a round white ceramic dish.
  • Arrange 6 hexagonal pieces around central piece, leaving space between all the shapes.
  • Create a border with the remaining pizza pieces, alternating between the triangles and rectangles.

The Rugby Ball

This can be done either as a pizza or as focaccia bread.

(Focaccia bread is very similar in style to a regular Italian pizza, but is usually a bit thicker and stuffed or topped with herbs and/or other ingredients.)

Pizza Shape

  • On a well-floured surface, roll out into an oval shape.
  • Transfer to a large baking tray lined with baking paper.
  • Spread with pesto, and then use the blunt back end of a knife to poke holes in the surface (or use your fingers).
  • Sprinkle with parmesan, topped with olives, feta and pine nuts.
  • Bake at 220 C for 12-15 minutes, or until golden brown and thoroughly cooked.

Ingredients for toppings

  • 2 Tubs Mediterranean Delicacies Sundried Tomato Pesto
  • 2 Tubs Mediterranean Delicacies Grated Parmesan Style Cheese
  • 10 olives, halved and stoned
  • Feta chunks from Mediterranean Delicacies Danish Feta 700g
  • 1 Tub Mediterranean Delicacies Pine Nuts
  • Extra virgin olive oil, salt and pepper, Mediterranean Delicacies Humus Deluxe

Serve hot with a drizzle of extra virgin olive oil, some salt flakes and freshly ground black pepper, plus some Deluxe Humus for dipping. Enjoy!

Heart Shaped Pizza

Ingredients for toppings

  • 2 Tubs Mediterranean Delicacies Sundried Tomato Pesto
  • 2 Tubs Mediterranean Delicacies Grated Parmesan Style Cheese
  • Mediterranean Sundried Tomato’s
  • Olives, Anchovies, Feta cheese, Grilled Asparagus, Red Jalapeno Chillies

Pizza Shape

  • On a well-floured surface, roll out into a round shape.
  • Outline heart shape with food marker
  • Cut away excess dough with pastry cutting wheel
  • Add your choice of toppings
  • Transfer to a large baking tray lined with baking paper.

Serve on a wooden board garnished with chillies and lettuce.

Ingredients for toppings

  • 2 Tubs Mediterranean Delicacies Sundried Tomato Pesto
  • 2 Tubs Mediterranean Delicacies Grated Parmesan Style Cheese
  • Feta cheese, cooked grated spinach**, Olives, sundried tomatoes

**Mediterranean Delicacies Coriander or Basil Pesto can be substituted for the spinach.

Pizza Shape

  • Roll out dough into large rectangle
  • Smear with Mediterranean Delicacies Sundried Tomato Pesto
  • Add cheese topped with grated spinach
  • Create goals and lines by sprinkling feta cheese
  • Create the two ‘teams’ with olives for Team 1 and sundried tomatoes for Team 2

Serve on a large white ceramic plate or wooden board with lettuce
