BUTTER CHICKEN Serves: 4? Prep time: 30 minutes INGREDIENTS 4 Tbsp sunflower oil? 1 onion, grated? 2 Tbsp garlic, crushed 1 Tbsp ginger, minced 2 tsp cumin seeds 1 tsp fennel seeds 1 cinnamon stick? 1 tsp chilli flakes? 800g chicken breasts, cubed 1 tsp garam masala? 1 tsp turmeric? 1 tsp castor sugar? 410g canned tomato purée 150g butter? 1 cup plain yoghurt? Handful coriander, chopped METHOD
- In a large saucepan, heat the oil and add onion, garlic, ginger, cumin seeds, fennel seeds, cinnamon stick and chilli flakes. Cook over medium heat for about 3 minutes.
- Add chicken breasts and brown on all sides. Add garam masala, turmeric and sugar, and cook for another minute. Add tomato? purée and cook for another 10 minutes, then add butter and yoghurt, and simmer for another 10 minutes on a low heat. Stir in coriander and serve.
