
Lemon, pea and spinach couscous Serves: 4? Prep time: 35 minutes INGREDIENTS 2 Tbsp avocado oil? 2 spring onions, chopped 1 lemongrass, chopped 150g mushrooms, chopped? 1 bunch spinach, finely chopped? 1/2 red pepper, finely chopped? 1 cup couscous? 1 cup vegetable stock? 1 cup dry white wine? 1 cup frozen peas, defrosted? 1/4 cup grated parmesan cheese METHOD
- In a saucepan, add avocado oil, onion and lemongrass and sauté until onion is translucent. Add spinach and mushrooms and sauté for 5 minutes until spinach is wilted. Bring stock and wine to boil and add to couscous, stirring until all liquid has been absorbed and grains have doubled in size and portion. Add spinach mixture, peas, red peppers and cheese and mix.
- Serve garnished with extra grated parmesan cheese.
