These fail-proof pie recipes are  packed full of flavour and perfect for a weekend indoors. EASY APPLE PIE Makes: 1 large pie Screen Shot 2016-05-06 at 10.23.20 AM INGREDIENTS 40g butter? 8 apples, peeled and sliced? 1 teaspoon cinnamon? 400g sweet short crust pastry 1 egg, lightly beaten ?40g castor sugar METHOD

  1. Preheat oven to 180°C.?
  2. Heat butter in a pan and add apples, sugar and cinnamon. Cook for five minutes and set aside.
  3. Roll the pastry out and place the apples in the middle of the pastry.?
  4. Fold the pastry towards the apples, making sure not to completely cover the apples.?
  5. Brush the pastry with egg wash and sprinkle a tablespoon of sugar over the pie.
  6. Bake in the oven for 40 minutes.
  7. Serve warm with cream or custard.
Screen Shot 2016-05-06 at 10.24.01 AM SPINACH AND FETA PARCELS Makes: 12 parcels INGREDIENTS 20ml olive oil? 1/2 onion, chopped? 1 garlic clove, chopped 250g spinach, chopped Salt and pepper to taste 100g feta cheese, crumbled 4 sheets phyllo pastry? 40g butter, melted METHOD
  1. Heat oil and add onion and garlic. Cook for five minutes.
  2. Add spinach and season with salt and pepper. Cook for a further ?five minutes. ?
  3. Add feta cheese, remove from heat and set aside. ?
  4. Brush the phyllo sheets with butter and place them on top of ?each other to form one sheet. Cut into 12 squares. ?
  5. Place the spinach filling in the middle of each square and pull ?the phyllo sheets together to form a bundle. ?
  6. Brush with butter and bake in the oven at 180°C ?for 30 minutes. ?

INGREDIENTS 60 ml olive oil? 1 onion? 2 celery stalks, chopped? 500g beef mince ?50g tomato paste? 80g frozen mixed vegetables? 20g parsley, chopped ?20g thyme, chopped ?Salt and pepper? 500ml beef stock 4 potatoes, peeled and thinly sliced METHOD
  1. Heat oil in a saucepan, add onion and celery and cook for five minutes on medium heat. Add mince and tomato paste and cook for seven minutes.
  2. Add frozen vegetables, beef stock and herbs. Cook on medium heat for 10 minutes.
  3. Pour the mince sauce into an oven-proof baking dish, top with sliced potatoes and bake in oven at 180°C for 40 minute.
