Leg of lamb roast

1 leg of lamb on the bone (about 2kg)

100ml olive oil?40ml salt

40ml olive oil

20-30 small pickled onions, peeled

120g small Rosa tomatoes

Garlic cloves from 1 whole garlic bulb

4 sprigs rosemary

Salt and freshly ground black pepper to taste


  1. Place lamb in a large ovenproof dish. Pour 100ml olive oil over and flavour with salt and pepper. Place uncovered in the oven for an hour.
  2. In the meantime, heat 40ml olive oil in a pan and brown onions. Add tomatoes and fry until soft.
  3. Remove the lamb from the oven after an hour. Pack onions, tomatoes and garlic around the lamb, and add rosemary. Flavour with more salt and pepper, and place back in the oven. Leave for another four hours.
  4. Pour sauce over the meat every so often. The meat will be falling off the bone by the time it is ready.
