
Makes 1 Litre
Ingredients:
500g ripe Mango, peeled and chopped
125ml Water
20ml Lime juice
2cm Ginger root, grated
20g Castor sugar
Method:
1. Place ginger, sugar and water in a saucepan, bring to a slow boil and remove from stove
2. Sieve the ginger water into a bowl, separating the ginger pulp from the liquid, set aside to cool
3. Blend mango, ginger water and lime together until smooth
4. Pour into a plastic container and freeze
5. Whisk the frozen Mango mixture after 2hrs in the freezer, return to the freezer for a further 2hrs
6. Serve on its own or with fresh seasonal fruit
