125 g flour
1 teaspoon baking powder
2 eggs, whisked
125 g butter at room temperature
125 g caster sugar
1 teaspoon vanilla essence
1 tablespoon water
1 tablespoon icing sugar
1 drop food colouring
WHAT DO DO
1 Preheat the oven to 190 °C.
2 Put a paper liner in each hollow of a muffin tin.
3 Sift together flour and baking powder.
4 Add the eggs, butter, caster sugar and vanilla essence to the flour mixture.
5 Beat with an electric beater until creamy. The mixture is ready when it easily drops off a spoon.
6 Drop a teaspoonful of mixture into each paper cup in the muffin tin.
7 Bake in the preheated oven for 20 minutes.
8 Remove from the oven and leave to cool.
9 Meanwhile mix various colours of icing in small separate containers. The recipe below makes enough icing for 4 fairy cakes.
10 Mix water, icing sugar and food colouring.
11 Drop a little icing in the middle of each cooled fairy cake and spread or twirl it.
12 Decorate the fairy cakes with something sweet such as cherries, sprinkles or silver balls.
4 slices of bread
¼ cup milk
2 cups cornflakes
WHAT TO DO
1 Cut each bread slice diagonally into triangles.
2 Place the bread triangles in a dish.
3 Break eggs into a bowl.
4 Add the milk to the eggs and mix well with a fork.
5 Pour the milk mixture over the bread in the dish. Turn the bread triangles with an egg lifter to ensure both sides are completely coated with the egg mixture.
6 Put cornflakes in a plastic bag, fasten it and crush the cereal with a rolling pin.
7 Put the crushed corn flakes in a shallow dish.
8 Put the butter in a frying pan.
9 Heat the butter over medium heat until melted.
10 Using the egg lifter, remove the bread triangles from the egg mixture and put them on top of the crushed corn flakes. Turn them so both sides are covered with crushed corn flakes.
11 Put the bread triangles in the hot melted butter and fry (in batches if necessary) for about 4 minutes or until golden under-
neath. Use the egg lifter to turn them and fry the other side for 4 minutes or until golden.
12 Serve with syrup, fried bacon or caster sugar.
