1. Cream cheese: Mix the cheese, spring onion, parsley and lemon zest well and season with salt and pepper.

2. Rolls: Remove the spinach stems and roughly chop the leaves.

3. Spread some of the cream cheese mixture on a tortilla. Arrange half the spinach on top of the cream cheese. Add another tortilla and spread cream cheese on top.
