Preheat the oven to 200°C. Grease a large baking sheet with non-stick spray.

1. Soup: Heat the olive oil in a large pot and fry the onion, garlic and ginger until soft and fragrant.

2. Add the spices and butternut and stir-fry for 1 minute.
