Preheat the oven to 200°C. Grease a medium ovenproof dish or 2 loaf tins with non-stick spray.
1. Heat the oil in a large pan and fry the onion and garlic until fragrant. Add the bacon and stir-fry until done.
2. Add the spinach, cover the pan with a lid and steam-fry for 5 minutes. Remove the lid and stir-fry until the spinach is wilted.
