Preheat oven to 180 C. Heat a little oil and fry the bacon until done. Add the onion and garlic, adding more oil if necessary, and sauté over medium heat until soft and fragrant. Remove the pan from the heat and stir in the herbs. Season generously with salt and pepper, mix with the potato cubes and spoon into a medium-sized ovenproof dish. Mix the cream and mustard powder together, season to taste and pour over the potatoes. Bake for about 1-1 1/4 hours or until the sauce is thick and flavoursome. Serves 4.
